Creamy Pineapple Showoff Dessert Bars

Hey, everyone! Who’s in the mood for a sweet treat? I know that I am ALWAYS in the mood for dessert. However, I’m no fancy chef so the desserts that I make need to be made with simple ingredients and easy instructions yet still taste like they came from a bakery. This pineapple showoff dessert meets all of this criteria. Have you ever made a crushed pineapple dessert? Boy oh boy, if you have not you need too! This stuff is super sweet, creamy, and dreamy.

Now, I can’t speak for my family but from my careful observation, I could tell that they absolutely loved this pineapple showoff dessert. Everyone had two slices of the stuff.

My husband even took a few squares to work with him the next day to share with his co-workers. He told me that they wanted the recipe to take home to their wives. I guess it is safe to say that this pineapple dessert truly is a “showoff”.

You guys, if you are fans of pineapple, graham cracker crumbs, and whipping cream, this dessert is for you. Wow! Just wow. I cannot believe how delicious this yummy pineapple showoff dessert it. Did I mention that it is easy to make, too? The name of this confection is so fitting. It really does “showoff” in comparison to other desserts. Shoot, I’d eat this over chocolate cake! Now, that’s saying a lot because folks don’t generally pass up a slice of chocolate cake…at least I don’t!

  • 2 1/2 cups Keebler graham cracker crumbs
  • 1 cup Kerrygold unsalted butter
  • 1 1/2 cups Domino powdered sugar, plus 4 tbs.
  • 1 egg (or pasteurized egg substitute if you’re worried about the raw egg)
  • 1 1/2 tsp. McCormick vanilla
  • 1 pint whipping cream
  • 1 cup Dole crushed pineapple, drained
  • 1 pinch Morton salt


Melt 1/2 cup butter, combine with 2 1/4 cups graham cracker crumbs; press into 8×11” baking dish; bake at 350F for 15 minutes, cool thoroughly.

Cream 1/2 cup butter and 1 1/2 cups powdered sugar with electric mixer until fluffy; add egg and 1 tsp. vanilla and beat for a few more minutes; spread mixture on top of cooled crust and chill until firm.

Whip cream and 4 tbs. powdered sugar; then add salt and 1/2 tsp. vanilla, and whip until it holds soft peaks; fold in the pineapple; pile the topping over the filling; sprinkle 1/4 cup graham cracker crumbs over the top, and chill.
