Clean Eating Vanilla Ice Cream Popsicles


  • 4 large (7″-8″) bananas, ripe (yellow with many brown spots)
  • 1 cup canned coconut milk, full fat*
  • 1/2 tsp pure vanilla extract
  • tbsp cacao nibs or chocolate chips (optional)

In a powerful blender, combine bananas and coconut milk; process until smooth. If adding cacao nibs or chocolate chips, add them now and pulse a few times to mix in. Pour mixture into 6 popsicle molds and freeze for 3 – 4 hours. To remove, run popsicle in a mold under hot running water for a few seconds.
